In an attempt to get away from over-processed foods, I've gotten back to my chef roots and turned the kitchen into something of a fromagerie. Considering that there are basically only a handful of ingredients needed to make almost every cheese out there, the hardest part of the job is patience. These are a few we've produced in the last month (at various stages of the aging process).

Yum! What kind of cheese is it? You should bring some in for us all to sample :)
